Buffalo Bites

Ingredients

  1. 1 1/2 pounds chicken breast or tenders cut into 1-inch pieces.

  2. 1 1/2 cups almond flour

  3. 1/4 cup + 2Tablespoons tapioca flour

  4. 1/2 tsp. smoked paprika

  5. 3 large eggs, beaten

  6. 2 1/2 tsp salt

  7. Buffalo sauce, or other dipping sauce of choice

Directions

  1. Season the chicken with 1 1/2 teaspoons of salt and set aside.

  2. In a large bowl combine the almond flour, tapioca flour, remaining salt, and paprika. Pour the beaten eggs into a shallow bowl.

  3. In a large cast iron or non stick skillet over medium heat, melt enough coconut oil or ghee to cover the bottom of the pan. Working in batches, fry the chicken until the crust is a light golden brown and the meat is cooked through, about two minutes each side. Once cooked, place the chicken onto a paper towel lined plate.

  4. Toss in your favorite sauce.
