- 1 Organic Rotisserie Chicken
- 1 cup organic grapes
- 1/2 cup pre-sliced almonds
- 2 Tablespoons of avocado mayo (or similar)
- 1/2 cup celery (if preferred)
- Salt & pepper to taste
Directions
- Pull and shred the breast meat from both the breasts of the rotisserie chicken (no skin).
- Slice grapes in half.
- Toast sliced almonds in oven (watch closely to not burn, each oven varies).
- In a mixing bowl, toss together the chicken, red grapes, toasted almonds, and celery. Stir in the avocado mayo, salt and pepper.
- Cover and chill until ready to serve!
