Chicken Salad

Ingredients

  • 1 Organic Rotisserie Chicken
  • 1 cup organic grapes
  • 1/2 cup pre-sliced almonds
  • 2 Tablespoons of avocado mayo (or similar)
  • 1/2 cup celery (if preferred)
  • Salt & pepper to taste

Directions

  1. Pull and shred the breast meat from both the breasts of the rotisserie chicken (no skin).
  2. Slice grapes in half.
  3. Toast sliced almonds in oven (watch closely to not burn, each oven varies). 
  4. In a mixing bowl, toss together the chicken, red grapes, toasted almonds, and celery. Stir in the avocado mayo, salt and pepper.
  5. Cover and chill until ready to serve!
