Chipotle Chicken Tacos
INGREDIENTS
- 2 Chicken breasts
- 8 Bib or romaine lettuce leaves
- 2-3 Slices of bacon, cooked and chopped
- 1 Avocado
- 2 limes, halved
- 2 Tablespoons chipotle Lemonaise
Directions
- Heat EVOO in a large skillet on medium-high heat.
- Roast chicken in pan (approximately twenty-five minutes)
- Cook bacon in oven until desired crispness is reached
- Assemble tacos, starting with bib lettuce, then chicken, avocado, chipotle lemonaise, bacon crumbles, and one jalapeño slice per “taco.’'
- Serve and enjoy!
