Everything Bagels

Ingredients

  • 1 cup + 3 tablespoons cassava flour

  • 1 cup + 3 tablespoons arrowroot flour

  • 4 eggs

  • 1/4 cup olive oil

  • 2 tablespoons honey

  • 1 tablespoon water

  • 3/4 teaspoon cream of tartar

  • 1/4 teaspoon baking soda

  • 1 teaspoon salt

  • Everything but the Bagel Seasoning

  • 2 tablespoons ghee

Directions

  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.

  2. Fill a large saucepan halfway and bring to a boil. Once boiling, turn down the heat, but allow tp keep boiling.

  3. While waiting for the water to boil, combine all the ingredients except seasoning and ghee in a medium-large bowl until smooth.

  4. Separate the dough into four equal parts.

  5. Roll each segment of dough into a ball and shape into a bagel. You may need to wet your hands to shape the dough, so that it does not stick to you.

  6. Drop one bagel at a time into the water and cook for one minute on each side.

  7. Once the bagels have boiled, set them on the baking tray.

  8. Melt the ghee into the microwave for 20-30 seconds. Then brush on top the bagels and sprinkle with everything but the bagel seasoning.

  9. Bake for 25 minutes, or until golden brown. Remove from oven, and allow to cool completely.
