Lemon Poppy Seed Cookies
Ingredients
1/4 cup melted and cooled coconut oil
1/4 cup honey
1 egg, or sub one flax egg (1 tbsp. ground flax meal with 3 tbsp. water mixed, and let sit 10 minutes)
11/2 tbsp. lemon juice
1/4 tsp vanilla extract
zest from one large lemon
1 cup almond flour
2 1/2 tbsp. coconut flour
1 tbsp. poppy seeds
1/4 tsp salt
1/4 tsp baking soda
Directions
Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
Combine 1-6 in a medium-large bowl until smooth.
Add in 7-11 and stir to combine. Let dough rest 5 minutes.
Roll into 10-12 balls and place on baking sheet and gently flatten each one with your hand.
Bake 8-10 minutes, or until they begin to lightly brown on top.
Take out of the oven and let cool at least 10 minutes.
(Optional) To make a glaze combine 1/4 cup coconut butter, 2 tbsp. honey, 2 tbsp. lemon juice, and 1 tsp. of vanilla, and place on top each cookie.
