Lemon Poppy Seed Cookies

Ingredients

  1. 1/4 cup melted and cooled coconut oil

  2. 1/4 cup honey

  3. 1 egg, or sub one flax egg (1 tbsp. ground flax meal with 3 tbsp. water mixed, and let sit 10 minutes)

  4. 11/2 tbsp. lemon juice

  5. 1/4 tsp vanilla extract

  6. zest from one large lemon

  7. 1 cup almond flour

  8. 2 1/2 tbsp. coconut flour

  9. 1 tbsp. poppy seeds

  10. 1/4 tsp salt

  11. 1/4 tsp baking soda

Directions

  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.

  2. Combine 1-6 in a medium-large bowl until smooth.

  3. Add in 7-11 and stir to combine. Let dough rest 5 minutes.

  4. Roll into 10-12 balls and place on baking sheet and gently flatten each one with your hand.

  5. Bake 8-10 minutes, or until they begin to lightly brown on top.

  6. Take out of the oven and let cool at least 10 minutes.

  7. (Optional) To make a glaze combine 1/4 cup coconut butter, 2 tbsp. honey, 2 tbsp. lemon juice, and 1 tsp. of vanilla, and place on top each cookie.
