Pancakes

Ingredients

  1. 1/2 cup almond flour

  2. 1/2 cup tapioca flour

  3. 1 teaspoon baking soda

  4. 2 eggs

  5. 1/4 cup apple sauce

  6. 1/2 teaspoon vanilla

  7. Ghee

  8. Any desired add-ins such as blueberries or pecans (optional)

Directions

  1. Combine all ingredients except ghee in a medium sized bowl.

  2. Heat ghee in a large skillet or griddle over medium heat.

  3. Pour the batter onto the skillet or griddle to form 3-4 inch pancakes. Cook for 2-3 minutes, until bubbles begin to form on top, then flip and cook for an additional 2-3 minutes.

  4. Remove from the skillet, set aside, and repeat with the remaining batter.
